This recipe transforms Colour Nature's vibrant powders into a versatile and easy-to-use gel, ideal for intricate food decorations. Made with agar-agar for a natural set and vegetable glycerin for smoothness, this gel is perfect for adding a pop of natural color to cakes, cookies, and desserts.

Not only does it allow for precise application, but it also brings the beauty of nature’s hues to your culinary creations, ensuring your dishes are not just tasty but visually stunning too.

Ingredients:

  • 1/2 cup distilled water
  • 2-3 teaspoons Colour Nature powder (choose your color)
  • 2 teaspoons agar-agar powder (a natural gelling agent derived from seaweed)
  • 1 teaspoon vegetable glycerin (for smoothness and shine)
  • A few drops of citric acid (natural preservative)

Equipment:

  • Small saucepan
  • Whisk
  • Measuring spoons
  • Small storage containers or tubes

Directions:

  1. Prepare the Color Mixture:

    • In a small bowl, mix the Colour Nature powder with a little bit of distilled water to create a paste. This helps to eliminate clumps.

  2. Heat the Water:

    • Pour the remaining distilled water into a small saucepan and heat it over medium heat, but do not boil.

  3. Dissolve Agar-Agar:

    • Add the agar-agar powder to the heated water. Whisk constantly until the agar-agar is completely dissolved, about 3-5 minutes.

  4. Mix in the Color Paste:

    • Reduce the heat and add the color paste to the saucepan. Whisk thoroughly to ensure the mixture is even and smooth.

  5. Add Glycerin and Citric Acid:

    • Stir in the vegetable glycerin and a few drops of citric acid. The glycerin will give the gel a smoother texture and a bit of shine, while the citric acid will act as a preservative.

  6. Cool and Store:

    • Remove the mixture from heat and allow it to cool slightly. Once it's safe to handle but still warm, pour the gel into your chosen storage containers. Small squeeze tubes or jars work well.

  7. Refrigeration:

    • Store the gel in the refrigerator to set and preserve. It should be ready to use within a few hours.

Usage Tips:

  • The coloring gel can be used directly on baked goods, in icings, or as a food paint.
  • Always stir the gel before use as natural separation may occur.
  • If the gel is too thick, it can be gently warmed to reach the desired consistency.

Shelf Life:

  • The natural coloring gel should last for about 2-3 weeks in the refrigerator, thanks to the citric acid preservative.
